Cod with Pineapple Salsa

Over the Lent Season my clients asked for a easy recipe instead of having the infamous tradition of pizza on Fridays. Do not get me wrong I enjoy a great slice of pizza. But not every week.

So here it is fast easy delicious for any day of the week.


1 cup chopped fresh pineapple

1/3 cup of diced green or red bell pepper

3 Tbsp. fresh chopped cilantro

4 Tbsp. fresh lime juice divided

2 Tbsp. coconut oil

4 to 6 fresh cod fillets

Directions: In a small bowl combine pineapple, bell pepper, cilantro, 1 Tbsp. lime juice.

Option: Add a dash of Himalayan salt and fresh ground pepper to taste. Cover and refrigerate until ready to serve. In a frying pan add coconut oil and heat it. Add cod fillets. Drizzle with remaining lime juice. Cover for 3 to 4 minutes. Then turn fillets over for a reaming 2- 3 minutes or until cod flakes with fork. Remove from heat. Spoon salsa over fillets. Add a blessing and enjoy!
