Pumpkin Pie Protein Caramel Bliss Treats

Ingredients: 16 pitted dates (Soak the dates if they are not sticky and moist for about 15 minutes)

2 Tbsp. pumpkin butter

1 tsp. pumpkin spice

2 Tbsp. coconut oil

1 scoop vanilla plant based protein powder

1/3 cup toasted pepitas (raw pumpkin seeds)

Directions: Add the first 4 ingredients to the food processor. Mix ingredients for approximately 1 minute. Add protein powder. Roll the mixture into balls. Sprinkle with a couple of dashes of Himalayan salt and roll balls in the pepitas.
